beets + carrots + ginger.

The abundance of fruits and vegetables growing around us here in Dordogne is insane (I'm still in awe every time we can just go pick what we want to eat) and it inspires the kind of restorative, wholesome, simple and colorful eating I always strive for but can never seem to consistently manage when life gets in the way.

Elizabeth has instilled in me little ways of cooking that I will undoubtedly utilize for the rest of my life (orange juice in black beans, sprouting lentils, homemade yogurt) but one of my new favorite staples is this beet, carrot and ginger salad (plus lemon juice and a little olive oil). It's feel-good food.
